
Stop Waiting for Your Oven to Heat Up
There is nothing more frustrating than watching your throughput tank because your oven is taking forever to hit the right temperature. Or worse, you load a fresh batch of bread, the temperature dips, and suddenly you’re just sitting there waiting for the heat to climb back up. It’s a bottleneck that kills your rhythm. The trick we use to fix this is adding short-wave infrared (IR) bulbs. Think of them as a “turbo button” for your heating system.
How it actually works
Most ovens rely on warming up the air, which takes time. IR bulbs are different. They send electromagnetic radiation straight into the dough. It’s a direct hit. By tucking these lamps into the ceiling or the side walls, you don’t have to wait for the air to circulate. You get an immediate spike in heat exactly where you need it. It’s fast. Really fast. And that changes everything for your workflow.
The gear you’ll need
We usually go with quartz glass lamps filled with halogen gas. Why? Because you can crank the heat way up without worrying about the glass melting or the filament snapping. Installation is pretty straightforward. We use R7s or SK15 connectors, which basically means they’re drop-in replacements. No messy custom soldering required. Just a heads-up on the power side: these tubes pull a lot of juice to get that kind of heat. Make sure your wiring and contactors can handle the load, or you’ll be spending your morning resetting tripped breakers.
A few things to watch out for
Now, IR heating is powerful, but it’s directional. It hits what it sees. If you mount the bulbs too close to the bread, you’ll end up with a scorched crust while the inside is still raw. It’s a balancing act. You have to find the sweet spot between the IR intensity and your normal airflow. When you get the positioning right, you’ll see your bake rate climb without sacrificing the quality of the loaf.
